Chhole Bhature is a punjabi dish from the northern part of India however, the dish is popular all over the country. It is a combination of chana masala and puri. People like it because it is easy to cook and requires fewer ingredients. Let’s look at the recipe for this special dish.
The main ingredients are as follows.
For Chhole :
● 2 to 3 cups of soaked chickpeas
● Cumin powder
● Chopped onions
● Ginger paste
● Tomato puree
● Onion paste
● Coriander powder
● Salt
● Cloves
● Garam masala
● Turmeric
● Chili powder
● Chana masala powder
For dough
● 1 cup flour
● Salt
● Curd
● Refined oil
Recipe
You need to keep the chickpeas in water overnight for at least 8 to 10 hours. Take a pressure cooker and wait for 2 to 3 whistles. You can add some tea leaves to it. It will change the color from brown to black. Start to cook the chickpeas for 10 to 15 minutes. On the other burner, take a frying pan and put some refined oil in it. Add cumin seeds and chopped onions to the frying pan. After that add the ginger, garlic, and onion paste in. Saute well until the raw smell of the garlic goes away.
After a few minutes, add turmeric powder, red chili powder, chana masala powder, and coriander powder. Cook the mixture of tomato and onion. After that add some water so that it doesn’t get burned. Cook it for three to four minutes. The chana is ready. You can garnish it with onion, tomato, and coriander leaves.
Now focus your attention on Bhature. Compile together all-purpose flour or maida and wheat flour or atta on a dough kneading plate. Add oil and salt as per your requirement and mix it well.
Now, add the yogurt and mix it well. Add a little water and make the dough. To make the dough soft, you can add one tablespoon of ghee. It will also bring a good smell. After finishing you should wrap it with a kitchen towel and permit it to rise.
Take a frying pan and take comparable amounts of the dough and turn it into big-size puris. When you see that the oil is ready then add the Bhature to the oil. It should be deep-fried.
