Thick poha is well-suited for making tadka poha with veggies while the thin variant is better for making dry snacks like chiwda.
Sample Spiced Poha Recipe - To cook thick poha rinse it under running water for 2 minutes and set aside to drain. Heat oil in a pan over medium heat and add mustard seeds curry leaves and green chiles if using. Fry until the spluttering stops then add onion and fry until it turns translucent. Add turmeric powder and fry for a few seconds. Add the rinsed poha and salt to taste. Mix well and cook for 2-3 minutes on low heat.
