Urad dal chhilka split matpe with skin refers to a type of lentil commonly used in Indian cooking. It is a variety of black gram lentil (Vigna mungo) that has been split and hulled but the outer black skin or "chhilka" has been left intact. This results in lentils that have a black or dark brown skin on one side and a creamy-white interior on the other.
When cooked urad dal chhilka lentils have a creamy and slightly nutty texture. The skin adds a subtle earthy flavor and provides a slightly firmer bite compared to split urad dal without the skin.
Urad dal chhilka is a nutritious source of plant-based protein dietary fiber vitamins (especially B vitamins) and minerals (such as iron magnesium and potassium). It is particularly popular in vegetarian and vegan diets for its protein content.
Urad dal chhilka lentils do not require soaking before cooking making them convenient for quick preparation. They can be rinsed and cooked directly.
When cooking urad dal chhilka you can simply simmer it in water or broth until it becomes soft and creamy. Cooking times vary but generally take around 30-45 minutes. The skin side may remain slightly firmer in texture than the inner side.
