Black salt also known as Kala Namak is a type of rock salt that is commonly used in South Asian cuisine especially in Indian Pakistani and Nepali cooking. It is a dark reddish-black colored salt that has a distinct sulfurous flavor and aroma due to the presence of trace amounts of sulfur compounds.
Black salt is made by heating rock salt with charcoal in a furnace until it melts and then cooling it which gives it its characteristic color and flavor. It is often used as a condiment in chaats chutneys and other savory dishes where it adds a salty and slightly tangy flavor.
Apart from its culinary uses black salt is also used in Ayurvedic medicine as a digestive aid and as a remedy for various health conditions including indigestion bloating and constipation. It is believed to have cooling properties and is used in traditional Indian cooling drinks such as Jaljeera and Aam Panna.
