Katri Gum also known as as Sterculia gum also known as karaya gum is a natural gum that is derived from the sap of the Sterculia urens tree which is native to India and Pakistan. The gum is extracted from the tree by making incisions in the bark and collecting the sap as it oozes out.
Sterculia gum is commonly used as a food additive and thickening agent in a variety of products including ice cream cheese salad dressings and baked goods. It is also used in pharmaceuticals as a binder emulsifier and stabilizer.
Sterculia gum has several properties that make it useful as a food additive. It is a high molecular weight polysaccharide that can absorb large amounts of water and form gels which can help to stabilize and thicken food products. It is also resistant to heat and acid which makes it useful in products that are processed or have a low pH.
