The sumac bush grows wild throughout the Middle East, producing tart berries. When dried, the brick red berries are used either whole or ground as a souring agent. Primarily utilized in Middle-Eastern cuisine, sumac compliments fish, chicken, lentil, kebab, salad, and yogurt dishes. It is also an essential ingredient in Zahtar, a Middle Eastern spice blend that combines sumac, sesame and dried thyme.
RECIPE: Onion Sumac Salad
Prep-time: 5 minutes
Serving size: 4
1 white onion sliced into thin rings
1 red onion sliced into thin rings
1 tsp Rani Sumac Ground
½ tsp salt
Combine onions, salt and sumac in a bowl. Leave to marinade fro 30 minutes before serving. This quick side dish compliments any Middle-Eastern meal. To make a complete dish, onions can be served over plain couscous with a side of fresh yogurt.
