Cloves are the unopened flower buds of a small evergreen tree native to the Moluccas (Indonesia). Cloves are essential in garam masala and appear in many curry powder recipes. In Indian cuisine, it lends a hand to chutneys and many pickle dishes. It has also become an major ingredient in many rice recipes such as pullo and biryani. Cloves have an assertive, dark aroma that is warm and rich.
RECIPE: Apple Apricot Chutney
Cooking time: 45 minutes
Prep time: 15 minutes.
Serving size: 4 jars

1 lbs dried apricots, chopped
2 green apples, peeled and chopped
3 white onions sliced
??? cup raisins
2 cups white vinegar
??? cup brown sugar
½ tsp. Rani Mustard seeds
¼ tsp. Rani Ginger powder
8 Rani whole cloves
1 ½ tsp. salt
Using a preserving pan, add all ingredients and cook for about 45min. Make sure you stir mixture frequently. After chutney becomes thick and pulpy, pour into preserve jars. Makes about three pounds.
