Citric Acid is a naturally occurring fruit acid used to enhance the flavor of food. Citric acid is used to prevent the discoloration of foods that results from oxidization, and adds sour punch to dishes. In India, citric acid is sometimes used to curdle milk in preparation for making paneer, a traditional Indian cheese.
RECIPE: Lemon Coconut Rice

4 tbsp. corn oil
10 curry leaves
1 tsp. Rani Cumin seeds
1 tsp. Rani Mustard seeds
½ tsp. Rani Asafetida ground
1 tsp. chopped green chili
1 tsp. Rani Turmeric ground
1 ??? cups Rani Basmati rice
salt to taste
1 tsp. Rani Citric Acid
2 ½ cups water
4 tbsp. fresh grated coconut
In pan sauté with oil, curry leaves, cumin, mustard and asafetida. Add chili, turmeric, rice and sauté until rice is glossy. Add salt, citric acid, water and bring to boil. Lower heat, cover pan and simmer for 25 min. or until rice is cooked. Add coconut and serve. (lemon flavor comes from citric acid)
