Pearl river bridge superior light soy sauce comes from the initial batches oflight soy sauce procured during the early stages of the brewing process. Thepearl river bridge open-air, sunlit fermentation method provides exceptionalflavor with minimal coloration. Use in stir-fry both in the wok and pouredover finished dishes, or as you would as a condiment or dipping sauce. Note: light soy sauce denotes its color, not its salt content. Chinese chefscommonly choose light or dark soy sauce depending on the amount of colorthey want the sauce to impart on the dish.
