White pepper powder is a spice derived from the dried berries of the pepper plant (Piper nigrum). Unlike black pepper which is made from the fully ripe berries white pepper is prepared by removing the outer black layer through a process called retting. This results in a light-colored inner core which is then dried and ground into a fine powder.
White pepper powder has a milder flavor compared to black pepper. It is less pungent and has a slightly fermented and earthy taste. The spiciness of white pepper is more subtle allowing other flavors in a dish to shine through without overpowering them. It is often used in dishes where a more delicate pepper flavor is desired or when the appearance of black specks from black pepper is not desired.
White pepper powder is commonly used in various cuisines around the world particularly in Asian and European cooking. It is a versatile spice that can be added to soups sauces marinades stir-fries and other savory dishes. It is also used in certain spice blends seasonings and salad dressings.
