Matta rice is usually eaten unhulled or partially hulled and has a red husk. It has a nutty flavour. Compared to polished rice, it has a higher nutritional value. Matta rice is often known as red rice or brown rice due to the presence of dark coloured rice husk. A pesticides free rice that has been cultivated from Gods own country paddy fields. It is mainly cooked for lunch and dinner, sometimes breakfast in the form of Rice Soup/Porridge (KANJI Malayalam). Method of Cooking: Rinse the rice once or twice in running cold water and drain the excess water. 1(Gentle boil) Boil water in a vessel or pot and add required rice to the boiling water and cook for 40-45 minutes in a low medium flame with lid partially covered till it turns soft and rest of the water is drained out. 2(Pressure cooker):Add the rice to the pressure cooker and pour 3 cups of water for 1 cup of rice and cook medium flame for 20-30 minutes till it fully cooked and soft enough.
