Besan is yellow flour made from chickpeas. It is rich in protien and thus its ideal in Vegetarian Diets. Besan is a yellow color flour made by grinding chickpeas. Rich in protein, besan is used widely in the vegetarian Gujarati cuisine. Besan is used as a thickener, like in kut. It is added while cooking dry vegetable dishes to enhance flavor and to provide the protein content. But the most popular use for besan is for making pakoras or bhajias, the Punjabi or Gujarati 'kadhi' and the sweet 'Mysore Pak'.
