Kala chana also known as black chickpeas or Bengal gram is a type of legume widely used in Indian cuisine and other regional cuisines around the world. Kala chana has a distinct dark brown or black color which sets it apart from the more commonly known cream-colored chickpeas.
These legumes are rich in nutrients and are a good source of plant-based protein dietary fiber vitamins and minerals. Kala chana has a nutty and slightly earthy flavor along with a firm and dense texture. When cooked they retain their shape and have a slightly firm bite.
Kala chana can be used in a variety of dishes. They are often boiled or pressure-cooked until tender and used as an ingredient in curries stews salads and chaats (Indian street snacks). They are also commonly sprouted and used in dishes like salads and stir-fries.
