Native to the Moluccas, nutmeg is also cultivated in Sri Lanka, Malaysia, India and the West Indies. The nutmeg tree produces a peach colored fruit that contains the nutmeg seed at its center. Available both whole and ground, nutmeg has a pleasing aroma with a bitter sweet flavor. In India, nutmeg is used in meat, rice and desert dishes. It is also a vital ingredient in garam masala, curry powder and tea masala spice blends.
RECIPE: Poached Pears in Wine Sauce

1 bottle red wine
1 Rani Cinnamon Stick
4 Rani Clove Whole
1 Rani Nutmeg Whole
5 Rani Black Pepper Whole
¾ cup sugar
½ tsp Rani Ginger Ground
8 rip pears, peeled.
1 tsp. lemon zest
1 tsp. orange zest
Pour wine into heavy saucepan. Add cinnamon, clove, nutmeg, black pepper, sugar, lemon zest, orange zest, and ginger. Peel pears. Make sure to leave stems intact. Stand pears in saucepan. Bring liquid to boil over low heat, cover and simmer for 30 minutes. Remove pears to serving dish. Keep simmering liquid until it thickens, about 15 minutes. Strain syrup and pour over pears.
