Yellow mustard seeds are small round seeds that come from the mustard plant. They are typically yellowish-white in color and have a slightly bitter taste. Yellow mustard seeds are commonly used in cooking to add flavor and texture to a variety of dishes such as pickles relishes and sauces.
When crushed or ground yellow mustard seeds release an enzyme called myrosinase which reacts with a glucosinolate called sinigrin to produce a pungent compound known as allyl isothiocyanate. This is what gives yellow mustard its distinctive spicy flavor and aroma.
