"Puffed jowar" refers to jowar (sorghum) grains that have undergone a process to puff them up similar to the process used to create puffed rice or puffed corn. Jowar is a gluten-free whole grain and is a staple in many parts of India especially in regions with arid climates.
To create puffed jowar raw jowar grains are exposed to high heat and pressure. The heat causes the moisture inside the grains to turn into steam creating pressure within the grain. When the pressure becomes too high the grain bursts or "pops" resulting in a light and airy texture. The puffed jowar is then cooled and dried to maintain its crispiness.
Puffed jowar is commonly used in making various snacks and dishes especially in India. It can be seasoned with different spices salt or sweeteners to enhance its taste. It's often used in a similar way to puffed rice or puffed corn being utilized in snack mixes breakfast cereals or as an ingredient in various recipes. Additionally puffed jowar can be consumed as a snack on its own.
